Recipe- Rum Cake

Yummy Rum Cake
Just in time for Mother's Day.
Since this is one of my favorite cakes and so simple to make, I thought you would love to see how the cake is made and to have the recipe.

My mom used to make this cake, so of course in typical Southern Style,
I now make it also.

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

  • Cake Ingredients
  • 1 box (18 1/2 ounces) yellow cake mix
  • 1 box (3 3/4 ounces) vanilla instant pudding mix
  • 4 eggs
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 1/2 cup rum (dark is preferred but light is OK )
  • Nuts (optional)
  • Rum Glaze Ingredients
  • 1/2 cup butter
  • 1/4 cup water
  • 1 cup sugar
  • 1/2 cup  rum (dark is preferred but light is OK )

 For the Cake:
  1. Preheat oven to 325 degrees Fahrenheit.
  2. Grease and flour a bundt pan.
  3. In a mixing bowl, combine all cake ingredients and mix until batter is smooth.
  4. Put chopped nuts in the bottom of the pan - I used walnuts.
  5. Pour batter into the prepared bundt pan over the nuts.
  6. Bake for 1 hour. Remove from oven and allow to cool.
  7. Invert cooled cake onto a serving plater. Using a fork or toothpick, prick the top of the cake to form small holes that will absorb the rum glaze.

For the Glaze:
  1. Melt the butter in a heavy saucepan.
  2. Slowly bring the sugar mix to a light boil and cook for 5 minutes, constantly stirring.
  3. remove the sugar mix from the heat and stir in the rum.
  4. Allow the glaze to slightly cool before glazing the cake.
  5. Drizzle and smooth some of the glaze over the top and sides of the cake. Allow the cake to absorb the glaze and then repeat until the glaze is gone.
  6. Your rum cake is ready to serve(whipped cream or ice cream)Yummy

This is the most moist & yummy cake ever!

All wrapped and ready to go.

And May 12th is my birthday - I was such a gift to my mom.

Thanks mom!

Happy Birthday to me!

Janet gave me these cupcakes for the Big Day.
