Yummy Rum Cake
Just in time for Mother's Day.
Since this is one of my favorite cakes and so simple to make, I thought you would love to see how the cake is made and to have the recipe.
My mom used to make this cake, so of course in typical Southern Style,
I now make it also.
Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour, 15 minutes
- Cake Ingredients
- 1 box (18 1/2 ounces) yellow cake mix
- 1 box (3 3/4 ounces) vanilla instant pudding mix
- 4 eggs
- 1/2 cup water
- 1/2 cup vegetable oil
- 1/2 cup rum (dark is preferred but light is OK )
- Nuts (optional)
- Rum Glaze Ingredients
- 1/2 cup butter
- 1/4 cup water
- 1 cup sugar
- 1/2 cup rum (dark is preferred but light is OK )
For the Cake:
- Preheat oven to 325 degrees Fahrenheit.
- Grease and flour a bundt pan.
- In a mixing bowl, combine all cake ingredients and mix until batter is smooth.
- Put chopped nuts in the bottom of the pan - I used walnuts.
- Pour batter into the prepared bundt pan over the nuts.
- Bake for 1 hour. Remove from oven and allow to cool.
- Invert cooled cake onto a serving plater. Using a fork or toothpick, prick the top of the cake to form small holes that will absorb the rum glaze.
For the Glaze:
- Melt the butter in a heavy saucepan.
- Slowly bring the sugar mix to a light boil and cook for 5 minutes, constantly stirring.
- remove the sugar mix from the heat and stir in the rum.
- Allow the glaze to slightly cool before glazing the cake.
- Drizzle and smooth some of the glaze over the top and sides of the cake. Allow the cake to absorb the glaze and then repeat until the glaze is gone.
- Your rum cake is ready to serve(whipped cream or ice cream)Yummy
This is the most moist & yummy cake ever!
All wrapped and ready to go.
And May 12th is my birthday - I was such a gift to my mom.
Thanks mom!
Happy Birthday to me!
Janet gave me these cupcakes for the Big Day.
