Earl lived in Pensacola, Florida. I was born & raised in that city and met him
early in my life. He was best friends with Wallace Bond who was also a friend of mine.
Earl was a wonderful cook, southern or anything else.
This is a recipe for fish chowder from one of his books.
I have cooked it many times. It is wonderful & easy.
I decided to make the chowder for Julia's birthday dinner.
The following recipe for Fish Chowder was handed down through a Pensacola family for at least three generations.
It is so good it should only be served as a main course.
2 lg Onions, chopped
1 lg Bell pepper, diced
1 clove Garlic, minced
2 tbs Butter
2 tbs Flour
1 lg Can tomatoes
1 qt Water, hot
1-1/2 cup Potatoes, diced
1 lg Bay leaf
Salt & pepper
2 lbs Fish fillets
Lemon (optional)
Saute onions, bell pepper, garlic in butter until soft.
Add flour and cook 2 minutes. This is called a rue...
Add tomatoes and cook 5 minutes stirring all the time.
Add water.
Add potatoes and cook 15 minutes.
Add bay leaf, salt and pepper.
Simmer for 30 minutes.
Add fish fillets 15 to 20 minutes before serving. (I use a white fish)
Serve with crusty French bread.

I added the flour to make a rue - coating all the veggies.
Then you add the tomatoes.
I used flounder for the fish.
Add potatoes and then the fish.

I served the chowder with a salad and French bread.
And of course, BIRTHDAY CAKE!
