Cajun Meat Loaf + Cool Tomato Salsa



Cajun Meat Loaf


1 tablespoon canola oil
2 medium yellow onions, chopped
4 garlic cloves, minced
3 tablespoons minced jalapeño pepper
2 tablespoons minced sun-fried tomatoes
1/4 cup drained capers
1/3 cup tomato paste
3 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 pound lean ground beef
**1 1/2 pounds lean ground turkey
1/2 cup bread crumbs
1/2 cup skim milk
Cool Tomato Salsa

1. Preheat the oven to 350°
 2. Heat the oil in a skillet over medium-low heat. Add the onion and garlic and sauté until soft, about 10 minutes. Transfer to a large mixing bowl.
3. Add the jalapeño pepper, tomatoes, capers, tomato paste, chili powder, cumin, and cayenne to the onion mixture( this is where I add the lemon juice), and mix thoroughly. Add the ground beef and turkey(if you add turkey) bread crumbs, and skim milk, and combine throughly.
4. Place the meat loaf in a 9 x 4-1/2 x 2-1/2 inch bread pan. Place in the oven and bake for 1-1/2 hours, until crusty- brown on top. Remove from the oven and allow to rest for 10 minutes. Serve with salsa.
  


Optional
Cool Tomato Salsa


1-1/2 cups finely diced or chopped plum tomatoes
1/2 cup finely diced white onion
1/2 cup finely chopped fresh cilantro
2 tablespoons cider vinegar
1 teaspoon sugar

Place all of the ingredients in a small bowl and mix well. Set aside for 1 hour to let the flavors meld.

I adore this garlic peeler. It does work!
Just put the garlic inside, roll it around and viola!
It removes the skin of the garlic - Cut off the ends, chop it like you wish.

Finishing touch with a little bit of cilantro.

The cool tomato salsa is great also. 





No kidding this is the best meat loaf, and I don't even like meat loaf.
I love it, my children love it, Janet loves it!
